Mazedar Chicken Biryani Recipe – Pakistani Restaurant Style

Learn how to make delicious and flavorful chicken biryani at home using this easy step-by-step recipe in Urdu.

🍗 Zaruri Ajza (Ingredients):

  • Chicken – 1 kg (8 say 10 pcs)
  • Chawal – 750 gram (basmati ya sela)
  • Pyaz – 3 baray (barik cut kar layn)
  • Tamatar – 3 medium
  • Dahi – 1 cup
  • Adrak lehsan ka paste – 2 table spoon
  • Hari mirch – 4–6 (barik kati hui)
  • Hara dhania + podina – 1 cup mix
  • Biryani masala – 2 table spoon (ya ghar ka masala)
  • Haldi – ½ teaspoon
  • Lal mirch – 1 tea spoon
  • Garam masalay – elaichi, laung, tezpatta, etc.
  • Zarday ka rang – ½ cup
  • Namak – has be zaika

🔥 Chicken Garavy Tayyar Karnay Ka Tareeqa:

  1. Ek pateli mein oil garam karain aur pyaz golden brown honay tak bhunain.
  2. Adrak lehsan ka paste daal kar halki si bhunai karain.
  3. Chicken daal kar 5–7 minute achi tarhan bhunain.
  4. Ab is mein tamatar, dahi, haldi, lal mirch aur biryani masala daal kar cover kar dein.
  5. Chicken ko medium heat par 20–25 minute pakaain jab tak oil alag na ho jaye.
  6. Aakhir mein hara dhania, podina aur hari mirch daal kar mix kar dein.

🍚 Chawal Ubalnay Ka Tareeqa:

  1. Alag pateli mein paani garam karain. Us mein namak, tezpatta, 2 elaichi aur 2 laung daal dein.
  2. Jab paani ubal jaye to chawal daal dein.
  3. Chawal ko 80% tak ubal kar chan lein.

🏗️ Layering aur Dum:

  1. Ek boti wali pateli mein sab se pehle chawal ki ek layer daalein.
  2. Us ke upar chicken masala wali layer daalein.
  3. Phir dubara chawal ki layer daalein.
  4. Upar se zarday ka rang, hara dhania, podina aur thora oil sprinkle kar dein.
  5. Pateli ko tight band kar ke low heat par 15–20 minute dum par rakh dein.
