Haleem Kya Hai?

Haleem Pakistan aur India ki sab se zyada pasand ki jane wali dish hai, khaas taur par Karachi ki Haleem aur Hyderabadi Haleem mashhoor hain. Yeh gosht, daal aur gehon ko ghanto ghanto tak slow cook kar ke banayi jati hai. Bazaar wali Haleem ka taste is liye alag hota hai kyunki us mein:

  • Ghanto ghanto tak lagataar hila kar slow flame par pakaya jata hai

🥘 Bazaar Style Haleem Ingredients

Gosht

  • Beef (boti + haddi wala) – 1.5 kg
  • Beef ki nalli (bone marrow) – 2 pieces (optional lekin taste double kar dega)

Daal & Anaaj

  • Gehu (broken wheat / dalia) – 1 cup
  • Chana daal – ½ cup
  • Moong daal – ½ cup
  • Masoor daal – ½ cup
  • Mash daal – ½ cup

Masalay

  • Pyaz – 4 baray (bareek kaate hue)
  • Adrak lehsan paste – 3 tbsp
  • Lal mirch powder – 3 tsp
  • Haldi powder – 1 tsp
  • Garam masala powder – 2 tsp
  • Dhania powder – 2 tsp
  • Zeera powder – 2 tsp
  • Namak – zaiqa anusar
  • Ghee – 1.5 cup

Garnish

  • Tali hui pyaz – 1 cup
  • Hara dhania – 1 gaddi (bareek kata)
  • Adrak julienne – 2 tbsp
  • Hari mirch – 6 adad (bareek kati hui)
  • Lemon – 6 adad

👨‍🍳 Step by Step Bazaar Wali Haleem

Step 1 – Daal & Gehu ka tyaar karna

Sab daal aur gehu ko alag alag raat bhar bhigo dein. Agle din inhein alag alag boil kar lein jab tak yeh mushy na ho jayein.

Step 2 – Gosht ka masala tayar karna

Ek bari pateeli ya handi mein ghee garam karein. Ismein pyaz golden brown karein. Ab adrak lehsan paste, lal mirch, haldi, dhania aur zeera powder dal kar bhun lein. Gosht aur nalli dal kar roast karein jab tak gosht se tel alag na ho jaye. 6–7 glass pani dal kar pressure cooker mein gosht ko 40 minute paka lein (handi mein 1.5 ghanta lagay ga).

Step 3 – Daal aur Gosht mix karna

Uble hue daal aur gehu ko ek saath blend ya mash kar lein. Gosht ko shorbay ke sath daalon mein dal dein. Ab lagataar hila kar mash karte rahein (bazaar wale lambi karchi se lagataar ghontay hain).

Step 4 – Dum dena

Dheemi aanch par 1 ghanta tak lagataar hilate rahen. Agar texture zyada thick ho to halka pani dal dein. Namak adjust kar lein.

Step 5 – Garnishing aur Tarka

Haleem bowl mein dal kar upar se ghee mein tali pyaz ka tarka lagayein. Hari mirch, hara dhania, adrak aur lemon se garnish karein.

Haleem ko naan ya taftan ke sath serve karein. Upar se tali hui pyaz, hara dhania, adrak aur lemon dal kar asli bazaar wala maza lein. Agar spicy pasand ho to upar se chat masala ya garam masala chhidak dein.

  • Gosht mein nalli zaroor add karein, yeh hi asli creamy taste ka secret hai.
  • Zyada ghee ka use karein, kyunki bazaar wali haleem heavy hoti hai.
  • Hand blender se grind na karein, balkay wooden masher se ghontay rahen.
  • Slow flame par minimum 4 ghantay dum dein – jitna ziada time, utna ziada maza.
